On Friday we celebrated Luke's 6th birthday! during the night Rich and I snuck in his room and filled it w/ balloons while he was sleeping. When he woke up they were there to surprise him. We have a tradition of getting up early to open presents (if it's a weekday). that way Daddy can join us and the kiddos don't have to wait all day for their presents. Of course Luke was the first up and couldn't wait for the party to begin.6 YEARS ago!!!! this little man joined our lives! and stole our hearts! Luke at 3 days old!
Here is Luke with his "Boba fett ship" that Rich ordered for him off eBay, pre-built?!! He was thrilled with it and shows everyone who enters the home, all the features and various things it does!
another favorite present was this remote control Lego car... later in the day I learned that Rich had bought himself one too! (what a big kid!).... so the two of them could race them! :)
Luke had a pretty good birthday... you see, we've done fairly large parties every year and this year I just wasn't up to it. Plus most of our friends are all starting Kindergarten these past to weeks, so it just didn't seem like a good time. Luke had a bit of a hard time with this. He broke his Mama's heart by saying "I'm not having ANY friends, to my party!???" :( Mommy just wasn't up to it this year... so we tried to make his day special in other ways. After our morning party Luke had a friend over for the morning. The two had a blast together! Then we met up w/ Mamaw and Papaw at Coney Island for lunch. Then off to the carousel for a few rides. Back at home the kids had fun skipping nap time and playing w/ toys, then Daddy came home and Beth's Aunt Robin stopped by w/ a card for Luke. The card contained money.. which made his day... he's spent the past few days counting and recounting his money trying to understand how much he has now!

The other day a friend brought me an extra zucchini. I'm trying hard to learn to like new veggies and I'm convinced that I can learn to like them if I just find the best way to prepare them! :) Anyways... this seems to be the BEST way to prepare zucchini, according to my taste buds! I included the recipe below!

CHEESY FRIED ZUCCHINI
1/4 c. dry bread crumbs2 tbsp. Parmesan
2 tbsp. flour
1 tsp. salt
1 beaten egg
2 c. sliced zucchini
Fry in hot oil after dipping in eggs and then crumb mix, and serve with spaghetti sauce.
ummmmmmmmmmm delicious!!!!!!
